Halibut & Sweet Vegetable Stir-fry

So our lovely neighbor Bob came over the other day and brought us some freshly caught halibut. After much comtemplation, should I fry it, make tacos, grill it...I decided a nice stir-fry sounds amazing. And it was

Halibut & Sweet Vegetable Stir-Fry

1/4 cup coconut oil
1/2 large sweet Onion, roughly chopped
2 cups grated carrots
2 cups eggplant, peeled and cubed
2 cups zucchini, peeled and cubed
1 cup cherry tomatoes
1 cup red, orange & yellow sweet peppers, sliced
2 lb. wild-caught halibut (this is an estimate since Bob didn't package it in neat, organized packaging)
Juice of one lemon
1 tablespoon Herbes de Provence
salt and pepper to taste

Place oil in a large wok and heat. Add vegetables and cook until almost tender. Add the halibut, lemon juice and seasonings and saute until halibut is flaky. Serve up with a lovely salad and dinners on the table!
